Nothing says spring like this Easy Rotisserie Chicken Salad. This salad is made with a rotisserie chicken, some chopped vegetables, nuts and a mayonnaise based sauce. Serve it with fresh baguette bread or lettuce hearts!

Ingredients
1wholerotisserie chickenskin and bones removed and chicken shredded
1/2Cupmayonnaise
1teaspoon Dijon mustard
1tablespoonwhite wine vinegar
Juice of 1/2 a lemon
1teaspoondried sage
1teaspoongarlic powder
1/4teaspoon onion powder
1/2teaspoonsalt
1/2teaspoon black pepper
1/2smallred onionfinely diced
1/2smallwhite onionfinely diced
2celery ribscut into thin slices
1carrotpeeled and finely diced
Small bunch of fresh chopped parsleyroughly chopped
Make the salad dressing. In a medium bowl combine the mayonnaise, mustard, vinegar, lemon juice, sage, garlic powder, onion powder, salt, pepper and finely chopped parsley. Whisk well to combine and set aside.
In a large bowl combine the chicken, onions, celery and carrots. Stir well to combine.
Pour the dressing over the salad and toss really well to completely coat the entire salad. Wrap and refrigerate for one hour.
Remove from fridge and add the cashew nuts. Toss to combine and serve.
