Roasted Chicken Salad

Nothing says spring like this Easy Rotisserie Chicken Salad. This salad is made with a rotisserie chicken, some chopped vegetables, nuts and a mayonnaise based sauce. Serve it with fresh baguette bread or lettuce hearts!

Ingredients

  • 1 whole rotisserie chicken skin and bones removed and chicken shredded
  • 1/2 Cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon white wine vinegar
  • Juice of 1/2 a lemon
  • 1 teaspoon dried sage
  • 1 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 small red onion finely diced
  • 1/2 small white onion finely diced
  • 2 celery ribs cut into thin slices
  • 1 carrot peeled and finely diced
  • Small bunch of fresh chopped parsley roughly chopped
  • 1/2 Cup cashew nuts roughly chopped

Instructions

  • Make the salad dressing. In a medium bowl combine the mayonnaise, mustard, vinegar, lemon juice, sage, garlic powder, onion powder, salt, pepper and finely chopped parsley. Whisk well to combine and set aside.
  • In a large bowl combine the chicken, onions, celery and carrots. Stir well to combine.
  • Pour the dressing over the salad and toss really well to completely coat the entire salad. Wrap and refrigerate for one hour.
  • Remove from fridge and add the cashew nuts. Toss to combine and serve.
