These Fig and Camembert Tarts are the perfect little grown up appetizer. Puff pastry topped with caramelized onions, Camembert and fresh figs. Delicious!

Ingredients
1leekcut into very thin slices
1figthinly sliced length ways into 8 slices
3ozCamembert cheesecut into slices
1sheetPuff pastryenough to cut out 8 circles with a cookie cutter
In a medium skillet set over a medium heat, melt the butter and add the leeks. Cook, stirring regularly for about 10-12 minutes, or until the leeks are tender and slightly browned
Place a teaspoon of the leeks over each pastry, then top with the cheese and finally a a fig slice.
Bake in a preheated 350 degree F oven for about 15 minutes. The pastry should be puffed and lightly golden as well as the cheese melted. I topped them each with a parsley leaf. They should be served straight away.
