Fig & Camembert Tarts

These Fig and Camembert Tarts are the perfect little grown up appetizer. Puff pastry topped with caramelized onions, Camembert and fresh figs. Delicious!

Ingredients

  • 1 leek cut into very thin slices
  • 1 fig thinly sliced length ways into 8 slices
  • 3 oz Camembert cheese cut into slices
  • 1 sheet Puff pastry enough to cut out 8 circles with a cookie cutter
  • 1 tablespoon butter

Instructions

  • In a medium skillet set over a medium heat, melt the butter and add the leeks. Cook, stirring regularly for about 10-12 minutes, or until the leeks are tender and slightly browned
  • Place a teaspoon of the leeks over each pastry, then top with the cheese and finally a a fig slice.
  • Bake in a preheated 350 degree F oven for about 15 minutes. The pastry should be puffed and lightly golden as well as the cheese melted. I topped them each with a parsley leaf. They should be served straight away.
