Turkey Fried Rice

Ingredients

  • 1 turkey breast cut into small bite size pieces
  • 4 cups long grain white rice precooked
  • 2 carrots peeled and finely diced
  • 1 red pepper finely diced
  • 1 green pepper finely diced
  • 1 yellow pepper finely diced
  • 1 red onion finely diced
  • 1 leek ends trimmed and diced
  • 2 spring onions finely diced
  • 3 Eggs
  • 2 cloves garlic crushed
  • 1 inch piece fresh ginger grated
  • 1 tsp salt
  • 2 tbsp sesame oil divided
  • 1/4 cup soy sauce
  • 1/4 cup teriyaki sauce

Instructions

  • Season the turkey with salt. Heat 1 tablespoon of the sesame oil in the wok set over high heat. Add the turkey and cook, tossing regularly for about 5 minutes or until cooked through. Remove the turkey from the wok.
  • In the same wok, add remaining sesame oil with garlic and ginger. Stir for a minute and add all the vegetables except the spring onions. Cook, tossing regularly for 3 - 5 minutes.
  • Push the vegetables to one side of the pan and add the eggs. Break the yolks and stir them until they are cooked, about 2 -3 minutes. Stir into the vegetables.
  • Add the cooked turkey, rice, soy sauce and teriyaki sauce. Stir well, remove from heat and top with fresh spring onions.
  • Serve as a main course or part of a bigger dinner.
