Oat & Raisin Scones

There is nothing like a buttery scone with a cup of tea. And these Oat & Raisin Scones were a great take on an old classic.

Ingredients

  • 2 Cups flour
  • 2/3 Cups oats
  • 2 Tablespoons sugar
  • 3 Teaspoons baking powder
  • 1/2 Teaspoon salt
  • 3/4 Cup butter milk
  • 1 Egg whisked
  • 1/4 Cup butter cold
  • 1/2 Cup raisins

Instructions

  • Preheat oven to 375 degrees F and grease and line a large baking tray.
  • In a large bowl, combine the flour, oats, sugar, baking powder and salt. Sift together.
  • Add the butter in either small cubes grated. Using either your fingers or a pastry cutter, mix the butter into the flour mixture. You will have fine bread crumb texture.
  • Whisk the egg and milk together in a small bowl. Add to the flour mixture and stir until it is combined. You will have quite a sticky dough texture. Add the raisins and stir to combine.
  • Spoon the dough onto the tray in 10 even mounds. Bake for 12-15 minutes. Remove from oven and transfer to a wire rack to cool. I love them straight out of the oven with butter. But they are still great served later on. These will only keep for up to 2 days in an airtight container.
