Ingredients
1lbshrimppeeled and de veined
1Cupcoconut milk
4clovesgarlic crushed
1/2pieceginger rootfinely chopped
1Teaspoonground coriander
1/2Teaspoonground turmeric
1/2Teaspoonground cumin
1/2Teaspoonhot chili powder
Salt and pepper to taste
2Tablespoonsolive oil
Small bunch of fresh chopped coriander to serve
Instructions
Heat the olive oil in a large skillet set over high heat and add the ginger, garlic, turmeric, cumin & chili powder. Stir around for a minute or so, just long enough for the spices to be fragrant.
Toss in the shrimp and give the pan a good shake. Let the shrimp cook for about 3 minutes and then add in the coconut milk. Season with a little salt and pepper. Give a good stir and bring to a simmer for 5 minutes. Sprinkle over the fresh chopped coriander. Serve with Basmati or Jasmine rice.
