Spoon two tablespoons of the corn flour onto a plate. Dredge the turkey fillets in the corn flour and set aside. Heat the olive oil in a large skillet. Add the turkey and brown each side for just about 2 minutes per side. Remove from pan and keep warm.
In the reserved skillet set over medium heat, add the garlic, ginger and orange juice. Whisk for about 1 minute. Mix the extra tablespoon of water and corn flour together and add to pan. Continue to whisk until you have a smooth and thickened sauce. Gradually add the water whisking as you go. You should have a smooth, slightly thickened and glossy sauce. Reduce heat to low, return turkey to pan, season with salt and cover. Leave to finish cooking for about 8-10 minutes. Remove from heat, sprinkle with fresh chives and serve with rice.
