Grilled Barbecue Chicken Skewers

These easy to make, tender and juicy Grilled Barbecue Chicken Skewers need to be added to your barbecue rotation. Tender pieces of chicken marinated in a sweet and spicy homemade barbecue sauce and grilled just the way you like them. Serve them with a crisp salad and some fresh bread rolls for the perfect dinner.

Ingredients

  • 2 lbs chicken breast cut into 2 inch pieces
  • 1 Cup ketchup
  • 1 Tablespoon white wine vinegar
  • 1 Tablespoon Dijon mustard
  • 1 Tablespoon brown sugar
  • 1 Tablespoon Worcestershire sauce
  • 2 cloves Garlic crushed
  • 1/2 Onion finely chopped
  • 1/2 tsp dried chili flakes
  • Salt
  • Pepper

Instructions

  • Combine all the barbecue sauce ingredients in a saucepan and cook over medium to low heat for about 15 minutes, stirring occasionally. Remove from heat.
  • Place the chicken in a large bowl and cover with the barbecue sauce and stir to combine completely. Leave for about 10 minutes.
  • Tightly pack chicken onto skewer sticks. I got 6 for this recipe.
  • Cook chicken on a preheated grill barbecue for about 10 minutes per side or until cooked through and no longer pink. Chicken should be juicy and not dry.
  • Serve immediately for best results.

Notes

  1. Barbecue sauce can be made up to two weeks in advance and stored in a glass jar in the refrigerator.
  2. Chicken and be prepared and put in barbecue sauce up to a day before cooking.
  3. These chicken skewers are best served as soon as they are cooked.
