Why not have a muffin without all the guilt. These Honey Bran Muffins make a great alternative to breakfast or a mid morning snack. They are packed full of bran which make them high in fiber. And they have a little touch of honey for sweet goodness!
Preheat oven to 350 degrees F. Grease 12 muffin pans and set aside.
Whisk together the flour, baking powder and salt and set aside.
Add the bran to the milk and set aside.
In the bowl of you electric mixer, beat the butter and brown sugar on high speed for about 3 minutes. Add the egg and the honey and continue to mix for another 2 minutes. Add the flour mixture and mix on a low speed until combine. Add the bran mixture and stir until just combined.
Pour evenly into prepared muffin tins. Bake for 15 - 20 minutes. Muffins will be done with a toothpick inserted into the center comes out clean. Remove from oven and cool on a wire rack.
