Picadillo with Feta

A super easy Spanish style salad with a little bit of Feta tossed in!

Ingredients

  • 2 Tomatoes diced
  • 1/2 green peppers diced
  • 1/2 Red peppers diced
  • 1/2 White onion diced
  • 1 Spring onion finely chopped
  • 2 Tablespoons finely chopped parsley
  • 2 Tablespoons olive oil
  • 3 Tablespoons white wine vinegar.
  • 1/2 Cup feta cheese crumbled
  • Salt and pepper

Instructions

  • In a large bowl, add all of the vegetables and stir well to combine, Next, add the olive oil, white wine vinegar and salt & pepper. Mix thoroughly to combine all of the olive oil and vinegar. Crumble over the feta cheese and top with the parsley.
  • Cover and refrigerate for at least several house before serving. Can keep in the refrigerator for a few days.
