Fresh Spring Stir Fry

Ingredients

  • 1 large red pepper cut into slices.
  • 1 zucchini halved length ways and cut into 1/2 inch slices
  • 6 oz asparagus ends discarded and cut into about 3-inch pieces
  • 1/2 cup sun-dried tomatoes roughly chopped
  • 2 cloves garlic crushed
  • 1 tablespoon olive oil
  • salt

Instructions

  • n a large skillet set over medium heat add the garlic and olive oil. Cook for a minute until garlic is slightly browned. Add the red peppers and zucchini and cook for about 10-12 minutes. Remember to stir them while they are cooking so they don't stick and evenly cook. Now add the asparagus and continue to cook until cooked but still has a bit of a crunch, so about 10 minutes more. Add the sun-dried tomatoes and salt. Stir to combine the flavours and remove from heat.
