Bacon Tomato Salad

Ingredients

For the salad

  • 1 head romaine lettuce torn into small pieces
  • 1 cup cherry tomatoes quartered
  • 1/2 cup radishes ends trimmed and sliced thin
  • 1/2 cup bacon crumbled
  • 1/3 cup parmesan cheese shavings
  • 1/2 cup croutons

For the dressing

  • 1 Cup Greek yoghurt
  • 1/4 Cup olive oil
  • Juice of half a lemon
  • 2 tablespoons white wine vinegar
  • 3 tablespoons parmesan cheese finely grated
  • 1 clove garlic minced
  • 1 teaspoon white sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper

Instructions

Make the dressing

  • Combine all the dressing ingredients in a bowl and whisk to combine. Set aside.

Make the salad

  • In a large salad bowl, add the romaine lettuce. Top with tomatoes, radishes, bacon and parmesan shavings. Toss really well. Add croutons.
  • Add dressing just before serving and lightly toss the salad. Serve immediately once the salad is dressed.
