This Chicken Fajitas Dinner is a great way to get your people to the dinner table. Seasoned chicken over sauteed onions and peppers and all wrapped up in a Home Made Flour Tortilla with all the toppings!
In a large bowl, combine the chicken with garlic, lemon juice, 1 tablespoon olive oil, cumin, chilies (if using), salt and pepper. Stir to coat the chicken, then cover and refrigerate for several hours.
Meanwhile, in a large skillet add the other tablespoon of olive oil with the peppers and onions. Cook over high heat for a few minutes until they are slightly browned. Then reduce heat to medium-low and continue to cook until they are quite soft. Remove from heat and set aside.
In another skillet, turn heat to high and add the chicken. Stir frequently and cook the chicken over high heat for about 10 minutes.
Remove from heat along with the peppers and onions. I like to serve the chicken on top of the peppers and onions as shown above. Serve with the Avocado dip, tomatoes, lettuce, cheese, sour cream and Flour Tortillas. Enjoy!
