Stir fry dinners make great mid week meals. This Teriyaki Salmon and Stir Fry Noodles is so delicious and it comes together pretty quickly. Perfectly grilled salmon with seasoned noodles and vegetables.
In a large skillet set over medium heat, add the olive oil, garlic and ginger. Stir for about 30 seconds and add the salmon. Cook for about 4 minutes and turn each piece over. Cook for another 4 minutes or until the salmon is cooked through. Pour over teriyaki sauce and lime juice. Garnish with sesame seeds. Remove from heat.
Cook noodles in boiling water according to package. Depending on what type of noodles you are using, the cooking time will vary. I used egg noodles that cooked in 4 minutes. Remove from pot and drain. Set aside.
In a large wok, add the sesame oil, garlic and ginger. Stir for a minute and add the diced peppers and carrots. Cook for 3 - 4 minutes. Add the noodles and teriyaki sauce and stir well. Garnish with the spring onions and sesame seeds.
Serve the salmon on top of the noodles. You can serve it with extra teriyaki sauce if desired.
