Bell Pepper & Bacon Pasta Bake

Ingredients

  • 1/2 lb Penne pasta
  • 1 Red pepper finely died
  • 1 Yellow pepper finely diced
  • 1 Green Pepper finely diced
  • 1 Small onion finely diced
  • 1 Tomato finely diced
  • 4 Strips bacon roughly chopped
  • 3 Cups Marinara Sauce
  • 1 1/2 Cups mozzarella cheese shredded
  • 1/4 Cup parmesan cheese grated
  • 2 Tablespoons olive oil
  • 3 Garlic cloves crushed
  • 1 Teaspoon salt
  • 1 Teaspoon black pepper
  • 1 Teaspoon dried oregano
  • Small bunch fresh chopped basil

Instructions

  • Preheat oven to 350 degrees F. Have ready an 8 inch round deep sided baking dish.
  • Cook pasta according to package. Drain and set aside.
  • In a large skillet set over medium to high heat, add the olive oil and garlic. Stir for a minute. Add the peppers and onions. Cook, stirring occasionally for about 10 minutes. Move the vegetables to the side of the pan and add the chopped tomatoes and bacon. Cook for about 5 - 7 minutes until the tomatoes are soft and bacon cooked. Stir well. Add the salt, pepper, oregano and basil. Stir well and leave to cook for a further minute or so.
  • Add the pasta, vegetable mixture and marinara sauce to the baking dish. Stir well. Top with cheese. Bake for around 25 minutes. Remove from oven and let stand about 5 minutes before serving.
