Stuffing Topped Roasted Turkey Tenderloin

Ingredients

  • 4 turkey tenderloins
  • 1 tbsp olive oil
  • 2 cups bread crumbs
  • 1/2 cup parmesan cheese finely grated
  • 3 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 1/2 tsp salt divided
  • 1 tsp black pepper
  • small bunch fresh chopped parsley

Instructions

  • Preheat oven to 350 degrees F/180 degrees C. Have ready a medium sized baking dish.
  • Season the turkey on both sides using one teaspoon of the salt.
  • Heat the olive oil in a skillet set over high heat. Sear the turkey on each side for about 2 minutes. Remove from heat.
  • Add butter to the skillet until it melts, about a minute. Add the bread crumbs, remaining salt, pepper, garlic powder and onion powder. Stir really well and let cook for about 3 - 4 minutes until the bread crumbs are a little crisp. Remove from heat and leave to cool for a few minutes. Stir in the chopped parsley and parmesan cheese.
  • Place the turkey tenderloins in the baking dish and top with stuffing mixture. Press down firmly on each tenderloin. Put extra stuffing in the pan around the turkey tenderloins.
  • Bake in oven for about 20 minutes or until cooked through and no longer pink.
  • Let rest for about 5 minutes and serve.

Notes

  1. Yes, you can substitute turkey breasts but remember they are larger and you will only need two. And the cooking time will be longer. So adjust accordingly if you are using turkey breast.
  2. Don't use store bought bread crumbs for this recipe. The stuffing need bread, real bread. You can use any kind you have, but PLEASE make your own bread crumbs. I used white sliced bread and just put it in my food processor for a minute. Makes perfect bread crumbs.
  3. Cooking time will vary according to your oven.  Mine cooked in 15 minutes but could take up to 20 minutes.  Use a meat thermometer for a more accurate reading of 165 degrees f/75 degrees c internal meat temperature for turkey.
