Can we even believe how quickly September is zooming along? I, for one, keep thinking it’s still August. Before we know it, Christmas will be here….what? It’s kinda’ true, you know it..hahaha.

But for now, we’re going to keep the focus on fall and some great warming dishes like this turkey dinner. I made this recently for the family and it was delicious. We all loved it at our place so check out the recipe and see if you’d like to add it to your dinner rotation too!

Stuffing Topped Roasted Turkey Tenderloin

Ingredients To Make The Stuffing Topped Turkey Tenderloin

  • 4 turkey tenderloins
  • 1 tbsp olive oil
  • 2 cups bread crumbs
  • 1/2 cup parmesan cheese finely grated
  • 3 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 1/2 tsp salt divided
  • 1 tsp black pepper
  • small bunch fresh chopped parsley

Instructions

Preheat oven to 350 degrees F/180 C. Season the turkey with a little salt on both sides.

Heat a tablespoon of olive oil in a large skillet over high heat and sear the turkey on each side for about 2 minutes. Remove from pan and place in a baking dish.


Make The Stuffing

  • Heat the butter in the skillet. Add the bread crumbs, salt, pepper, garlic powder and onion powder. Stir around really well and let cook for 3 – 4 minutes or until the crumbs are a little crisp.
  • Remove from heat and let cool a few minutes. Add the parmesan and parsley and stir it up.

Top The Turkey With The Stuffing

  • Just spoon the stuffing over the turkey and gently pat it down. If you have any left over, just pour it in the pan around the turkey. Trust me, it’s delicious and you want all the extra stuffing.
  • Put it in the oven and roast it until it’s cooked through. Depending on your oven, this will be between 15 – 20 minutes. I use a meat thermometer and the internal temperature you are looking for is 165 degrees f/75 degrees c.

And it’s done. It’s best to let it rest for about five minutes before plating it up. It’s an honest to goodness great dinner that you will love. And dare I say it, a great Thanksgiving substitute if you are just a couple of people. If you are not looking to roast a whole turkey for two or three people, this could be a great option.

Recipe Notes

  • NOTE: Don’t use store bought bread crumbs for this recipe. The stuffing needs bread, real bread. You can use any kind you have, but PLEASE make your own bread crumbs. I used white sliced bread and just put it in my food processor for a minute. Makes perfect bread crumbs.
  • Remember, because it’s a low fat meat, it can have a tendency to dry out, so try to not over cook it.
  • This is one of those dishes that comes together pretty quickly and cooks quick as well. You can prepare it in advance and put it in the fridge before cooking in the oven. Which makes it a great dinner for guests as well as family dinners.
  • And if you happen to have any leftovers, can I just say it makes a great sandwich! I had some leftover with stuffing and I made a delicious sandwich with the turkey, stuffing, thinly sliced onions and lettuce. It was a great lunch the next day.

  • Let rest for about 5 minutes and serve.
