Calling all salmon lovers to the table for this Zesty Pan Seared Salmon. Using fresh lemon juice, capers and garlic for a zingy flavour that comes together quickly. Serve it with the Fall Harvest Wild Rice for a complete dinner.
In a small sauce pan add the butter until it sizzles, about a minute. Add the garlic, capers, lemon zest and lemon juice Stir and let cook for about a minute. Add fresh chopped parsley, stir and remove from heat.
Cook the salmon
Season the salmon with salt and pepper.
Heat a large skillet over high heat. Add the olive oil. Place the salmon in the skillet skin side down.
Cook each side for 3 - 4 minutes depending on the thickness of your salmon.
Pour over sauce at the last minute. Remove from heat and serve immediately.
