Curried Peas

Ingredients

  • 2 cups green peas thawed
  • 1 medium white onion finely diced
  • 2/3 cup vegetable stock
  • 3 Tablespoons butter
  • 2 Garlic cloves crushed
  • 1 Teaspoon turmeric
  • 1/2 Teaspoon cumin
  • 1 Teaspoon ground coriander
  • 1/2 Teaspoon salt
  • 1 spring onion finely chopped
  • Fresh coriander leaves to serve

Instructions

  • In a medium saucepan set over medium heat, add the butter and allow it to sizzle. About 30 seconds. Add the onion and cook down until soft and slightly browned. About 5 – 8 minutes.
  • Add the turmeric, cumin and coriander to the onions. Give a good stir and allow the flavours to enhance for about 1 – 2 minutes.
  • Pour in the defrosted peas and give a really good stir. Pour over the vegetable stock, stir and reduce heat to medium low. Leave to simmer for about 12 – 15 minutes. Stir occasionally as they simmer and add the salt.
  • Remove from heat, garnish with finely chopped spring onions and cilantro. Serve immediately or leave and reheat for later
