Ingredients
2cupsgreen peas thawed
1medium white onion finely diced
2/3cupvegetable stock
3Tablespoonsbutter
2Garlic cloves crushed
1Teaspoonturmeric
1/2Teaspooncumin
1Teaspoonground coriander
1/2Teaspoonsalt
1spring onion finely chopped
Fresh coriander leaves to serve
Instructions
In a medium saucepan set over medium heat, add the butter and allow it to sizzle. About 30 seconds. Add the onion and cook down until soft and slightly browned. About 5 – 8 minutes.
Add the turmeric, cumin and coriander to the onions. Give a good stir and allow the flavours to enhance for about 1 – 2 minutes.
Pour in the defrosted peas and give a really good stir. Pour over the vegetable stock, stir and reduce heat to medium low. Leave to simmer for about 12 – 15 minutes. Stir occasionally as they simmer and add the salt.
Remove from heat, garnish with finely chopped spring onions and cilantro. Serve immediately or leave and reheat for later
