Greek Salad with Tzatziki Dressing

Ingredients

For the salad:

  • 3 cups baby leaf lettuce
  • 1/2 Pint cherry tomatoes halved
  • 1 cup black olives pitted
  • 1 cup feta cheese cut into cubes
  • 1/2 Red onion halved and thinly sliced

For the Tzatziki:

  • 2 cups Greek yogurt
  • 1 large cucumber peeled, de seeded and grated
  • 3 cloves cloves crushed
  • Juice of one lemon
  • Two tablespoons of chopped dill
  • 1 Teaspoon sea salt
  • 2 Tablespoons olive oil

Instructions

  • Place the cucumber in a colander over a bowl. Leave it for at least an hour to drain off the liquid. Alternatively, put it in a clean tea towel and squeeze out the water.
  • Make the dressing by combining the yogurt, cucumber, garlic, lemon juice, dill, salt and olive oil. Stir well.
  • Toss together all the salad ingredients and serve the tzatziki on the side.
