Place the cucumber in a colander over a bowl. Leave it for at least an hour to drain off the liquid. Alternatively, put it in a clean tea towel and squeeze out the water.
Make the dressing by combining the yogurt, cucumber, garlic, lemon juice, dill, salt and olive oil. Stir well.
Toss together all the salad ingredients and serve the tzatziki on the side.
