Preheat oven to 350 degrees F. Wrap the tortillas in foil and place them in the oven for 15 minutes.
In a medium skillet set over medium heat, add the olive oil, garlic and onion. Stir and let cook until soft, about 5 minutes. Add the ground beef, stir around really well and it will start to cook quite quickly. Keep separating the meat with a wooden spoon until it is cooked completely, about 10 minutes. Add the cumin, paprika, chilli, salt, pepper, water and tomato paste. Stir really well until combined and remove from heat.
Lay out the wraps and fill each one with the meat, top with cheese, spring onion and tomato. Ready!
