Lemon Herb Quinoa Salad

Ingredients

For the quinoa salad

  • 1 cup quinoa
  • 2 cups Vegetable broth
  • 2 cups chickpeas cooked
  • 1 medium cucumber diced into 1/2 inch pieces
  • 1/2 cup pistachios roughly chopped
  • 3/4 cup feta crumbled
  • 1/4 cup fresh chopped mint
  • 1/4 cup fresh chopped parsley

For the lemon vinaigrette

  • 1/3 cup olive oil
  • 1/3 cup lemon juice
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Place a large skillet over medium heat. Add the quinoa and stir for about 2 minutes. Add all the stock, reduce heat to low and cover. Leave to cook for about 20 minutes or until the quinoa is cooked and the liquid is absorbed. Remove from heat.
  • In a small bowl combine the olive oil, lemon juice, honey, salt and pepper. Whisk to combine and set aside.
  • In a large salad bowl or serving dish combine the cooked quinoa, chickpeas, cucumber, feta cheese, pistachios, fresh parsley and fresh mint. Pour over the lemon vinaigrette. Toss to combine everything. Cover and refrigerate for about 30 minutes to let flavours enhance.
  • Serve cold or at room temperature. Can garnish with extra herbs if desired.
