Chicken Tenders in a Creamy Sun Dried Tomato Sauce

Ingredients
1lbchicken tenders
3/4cupchicken broth
1/2cupheavy cream
1/3cupsun dried tomatoes packed in oil, drained and roughly chopped
Heat one tablespoon of olive oil in a large skillet set over high heat. Add the chicken tenders and cook for for 4 - 5 minutes on each side. Remove from pan and set aside.
In the reserved skillet, reduce heat to medium and add remaining olive oil and garlic. Stir well for about 30 seconds and add the dried oregano, basil and rosemary. Stir well for a further 30 seconds. Add the sun dried tomatoes, stir and sautee for about 2 minutes.
Add the tablespoon of flour and stir in well. Slowly pour in the chicken broth, whisking as you pour to avoid lumps. Add heavy cream and continue to whisk until you have a smooth sauce, about one minute.
Add the chicken tenders to the sauce and bring to a gentle simmer. Evenly sprinkle over parmesan cheese and reduce heat to low. Cook for a further 5 minutes.
Garnish with fresh chopped parsley and serve.
