6 oz cheddar cheese cubed 2 oz mozzarella pearls 2 oz Gouda cheese slices 4 oz Spanish Serrano ham 1/2 cup cherry tomatoes 1/3 cup green olives 1/4 cup pecans Arugula leaves
Have ready a large wooden board or platter.
Cut the tomatoes in half and using a toothpick, skewer a tomato and a mozzarella pearl on each stick. Repeat for all.
Using a star cookie cutter, cut stars out of the sliced Gouda cheese.
Start at the base of the tree by placing the pecans in a small bunch to make the tree trunk.
Using about 2/3 of the cheddar cheese cubes, make a line across the board above the pecans for the first layer.
Next layer, lay out arugula leaves and place about 2/3 of the cheese and tomato sticks on top.
Make a layer of ham above the cocktail sticks.
Add more arugula and top it with cocktail sticks followed by another cheddar cheese layer.
Make a layer of olives above the cheddar cheese and then a small amount of arugula on top. Place a star of cheese at the very top.
Use additional cheese stars to decorate the platter. Serve or wrap and refrigerate up to 6 hours before serving.
