Calling all chocolate lovers!!! If you happen to have a confessed obsession, like me, you have to make this Double Chocolate Loaf Cake. It's has a dense, yet moist texture, and is utterly bursting with that rich chocolate flavour that I love and crave so much!
Preheat oven to 350 degrees F. Grease and line 2 loaf pans. Set aside.
Sift together the flour, cocoa powder, baking powder and salt.
Whisk together the milk and coffee.
In the bowl of your electric mixer, beat the butter on high speed for about a minute. Add all sugar at once and beat until pale and fluffy. About 3 minutes. Add the eggs, on at a time, beating well after each addition. Beat in the vanilla for about a minute.
Next, add half of the flour mixture and stir in with a wooden spoon. Add the milk coffee mixture and stir until combined. Stir in remaining flour. Add chocolate chips (reserving a few for the top). Stir until mixed through.
Evenly pour batter into the two prepared pans. Sprinkle over remaining chocolate chips.
Bake for about 40 minutes or until a toothpick comes out with a few crumbs.
Remove from over and put the pans on a wire rack to cool for about 10 minutes. Then remove cakes from pans and leave on the wire rack to cool completely.
