Calling all chocolate lovers!!! If you happen to have a confessed obsession, like me, you have to make this Double Chocolate Loaf Cake. It’s has a dense, yet moist texture, and is utterly bursting with that rich chocolate flavour that I love and crave so much!

Night Owl or Early Bird


It’s late, well by my standards it’s late.  I am go to bed early kind of gal.  As the sun sets, I can feel the yawns coming on.  That’s just who I am.  The flip side of that is I am a morning person. 

What I was trying to say is that it really is getting well on past my kind of bed time, but I feel the urge to write out this recipe that I promised earlier today.  If you are wondering the time, exactly ten thirty  pm.  Early for some I am sure.  But I am starting to feel like a vampire.

My day got caught up with cooking, photographing, washing dishes, then washing more dishes, several dental visits for several people, dog walking, school stuff, and all the other boring snore fest stuff that goes with being the almighty housewife. 

What I did manage today was a few new recipes that will be hitting the blog in the very near future.  If you are on Instagram and saw my story today, you probably can guess what one of the recipes will be.  No hints, you all just have to wait.  It’s easy and good.  The story of Julia’s Cuisine.

Notes About The Loaf Cake


  • This recipe makes TWO LOAF CAKES
  • I used strong brewed coffee and please don’t skip this step if you make the cake.  It really makes it in my personal opinion.  The rest of it is pretty straightforward. 
  • We just ate it plain as you see it.  I honestly don’t think it needed any dressing up or frills shall we say.  Great with a cup of tea or coffee.

Double Chocolate Loaf Cake

Ingredients

  • 1 1/2 Cups flour
  • 1 Cup sugar
  • 3 eggs
  • 2/3 Cup cocoa powder
  • 1/2 Cup milk
  • 1/4 Cup coffee
  • 1 Teaspoon baking powder
  • 1/2 Teaspoon salt
  • 1/2 Cup butter
  • 1 Cup chocolate chips
  • 2 Teaspoons vanilla

Instructions

  • Preheat oven to 350 degrees F. Grease and line 2 loaf pans. Set aside.
  • Sift together the flour, cocoa powder, baking powder and salt.
  • Whisk together the milk and coffee.
  • In the bowl of your electric mixer, beat the butter on high speed for about a minute. Add all sugar at once and beat until pale and fluffy. About 3 minutes. Add the eggs, on at a time, beating well after each addition. Beat in the vanilla for about a minute.
  • Next, add half of the flour mixture and stir in with a wooden spoon. Add the milk coffee mixture and stir until combined. Stir in remaining flour. Add chocolate chips (reserving a few for the top). Stir until mixed through.
  • Evenly pour batter into the two prepared pans. Sprinkle over remaining chocolate chips.
  • Bake for about 40 minutes or until a toothpick comes out with a few crumbs.
  • Remove from over and put the pans on a wire rack to cool for about 10 minutes. Then remove cakes from pans and leave on the wire rack to cool completely.
