Cajun Chicken Strips with a Minted Garlic Dip

You can never go wrong with chicken strips. And these Cajun Chicken Strips with a Minted Garlic Dip are fantastic. They are spiced with a Homemade Cajun Seasoning and dipped in a delicious minted garlic dip. Take a look!

Ingredients

For the chicken:

  • 2 Chicken breasts cut into thick strips
  • 1 Cup bread crumbs fine
  • 1 Tablespoon Cajun seasoning
  • 2 Eggs beaten

For the cajun seasoning:

  • 2 tsp salt
  • 2 tsp garlic powder
  • 2 tsp paprika
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp cayenne pepper
  • 1/2 tsp dried chili flakes
  • 1 tsp oregano
  • 1 tsp thyme

For the dip:

  • 1/2 Cup Greek yogurt
  • 2 Tablespoons mayonnaise
  • 2 Garlic cloves crushed
  • 2 Tablespoons finely chopped mint

Instructions

  • Preheat oven to 350 degrees F and grease with olive oil a large baking tray. Set aside.
  • Combine all the ingredients to make the Cajun seasoning and set aside.
  • In a large bowl, combine the bread crumbs and Cajun seasoning. Mix well.
  • Dip the chicken strips in the beaten egg and then the bread crumbs. Repeat for all chicken.
  • Lay on the baking tray. Bake for 10 minutes, remove from oven and turn over. Bake for a further ten minutes.
  • Make the dip by combining the yogurt, mayonnaise, garlic and mint. Stir well.
  • Serve chicken with the dip on the side.
