Make this ultra rich and creamy Goat Cheese and Caramelized Onion Dip this holiday season. A creamy goat cheese dip filled with sweet caramelized onions, chopped pecans, sharp spring onions and herbs & spices. Great served with your favourite fancy crackers!
Heat a medium sized skillet on the stove top set over medium heat. Add the olive oil and onions and give a good stir. Cook the onions on medium to high heat for about 5 minutes until browned. Reduce heat to low and continue to cook until completely soft and caramelized, about 10 more minutes. Remove from heat and leave to cool.
In a large mixing bowl combine the soft goat cheese, cream cheese and Greek yogurt. Mix on high speed for about 2 - 3 minutes until smooth. It will still have a few small lumps from the Goat cheese and that's fine.
Add the diced spring onion, lemon juice, garlic powder, onion powder, salt, black pepper 1 1/2 tablespoons of the chopped parsley and the pecans (reserving a few pecans for garnish). Stir well to combine. Cover and refrigerate for one hour.
Remove the dip from the fridge and transfer to a serving dish. Top with remaining parsley and pecans. Serve with toasted baguette slices, pita breads or crackers.

Notes
Bring cheese to room temperature - Make sure the goat cheese log is at room temperature before trying to mix it up. It needs to be softened, otherwise the dip will be lumpy.
Finely chop pecans - Make sure to finely chop the pecans, otherwise the dip will end up being too chunky.
Refrigerate - This dip needs to be chilled before serving for optimal flavour!
