Ingredients

  • Onion – I used a large yellow onion to make the caramelized onions.
  • Olive oil – Olive oil is used to caramelize the onions.
  • Goat cheese –This recipes uses a goat cheese log. Just make sure you bring it to room temperature before whipping it.
  • Cream cheese – Any brand of softened cream cheese will work for this dip.
  • Greek yogurt – I used full fat Greek yogurt. This helps make the dip creamier.
  • Spring onion – I added a finely diced spring onion to the dip to give it a bit of a sharp taste and to add some contrast.
  • Lemon juice – I used fresh squeezed lemon juice.
  • Fresh parsley – Fresh parsley adds a nice touch to the whipped dip.
  • Spices and seasonings – I used a combination of garlic powder, onion powder, salt and black pepper.
  • Pecans – Finely chopped pecans are added to the dip for contrast and flavour. I also used a few to garnish the dish when it was done.

Ingredients to make Goat Cheese and Caramelized Onion Dip

Instructions

  1. Caramelize onions – Heat a medium sized skillet on the stove top set over medium heat. Add the olive oil and onions and give a good stir. Cook the onions on medium to high heat for about 5 minutes until browned. Reduce heat to low and continue to cook until completely soft and caramelized, about 10 more minutes. Remove from heat and leave to cool. Check out the post on How to Caramelized Onions!
  2. Mix cheeses together – In a large mixing bowl combine the soft goat cheese, cream cheese and Greek yogurt. Mix on high speed for about 2 – 3 minutes until smooth. It will still have a few small lumps from the Goat cheese and that’s fine.
  3. Add remaining ingredients and refrigerate – Add the diced spring onion, lemon juice, garlic powder, onion powder, salt, black pepper 1 1/2 tablespoons of the chopped parsley and the pecans (reserving a few pecans for garnish). Stir well to combine. Cover and refrigerate for one hour.
  4. Garnish and serve – Remove the dip from the fridge and transfer to a serving dish. Top with remaining parsley and pecans. Serve with toasted baguette slices, pita breads or crackers.

Recipe Tips

  • Bring cheese to room temperature – Make sure the goat cheese log is at room temperature before trying to mix it up. It needs to be softened, otherwise the dip will be lumpy.
  • Finely chop pecans – Make sure to finely chop the pecans, otherwise the dip will end up being too chunky.
  • Refrigerate – This dip needs to be chilled before serving for optimal flavour!
