Ingredients
For The Salad
12ozbow tie pasta
1/2cupsun dried tomatoesroughly chopped
1/4Cup Parmesan cheesefinely grated
Fresh chopped basil
2smallItalian green pepperssliced into small rings
First, cook your pasta in boiling water for about 8 minutes. Remove from heat, drain and rinse in cold water. Set aside.
Next, make your salad dressing by adding all the ingredients in a small glass jar. Put the lid on and shake really well to combine all of the ingredients.
In a small skillet set over a medium heat, add the olive oil with the green and red peppers. Cook these for about 5-8 minutes until they start to soften. Remove from heat and set aside.
In a large bowl, combine your pasta with the salad dressing. Give it a really good toss to coat it completely. Next, add the sun dried tomatoes, peppers, parmesan & fresh basil. Stir to combine completely. Cover with plastic wrap and refrigerate for a few hours before serving.
