Such aversatile and easy dip. This can be served with breads, crackers or as a side for chicken & meat dishes. We served it last night with the Barbecue Tandoori Chicken. Such a fantastic combination of flavours together!
Peel and slice your cucumber length-ways. Once you have done this, remove all the seeds with a spoon and discard them. Now, grate all the cucumber. In a medium sized mixing bowl, combine the yogurt, cucumber, lime juice, coriander (reserving a little for garnish) and salt. Stir to combine the flavours and garnish with the rest of of the fresh coriander.
This can be served straight away or covered and stored in a the refrigerator for a few days. A very easy, fresh and delicious dip!
