Cucumber Raita

Such a versatile and easy dip.  This can be served with breads, crackers or as a side for chicken & meat dishes.  We served it last night with the Barbecue Tandoori Chicken.  Such a fantastic combination of flavours together!

Ingredients

  • 1 Cup Greek yogurt
  • 1 Cucumber
  • Juice of one lime
  • Small bunch of fresh coriander
  • Salt

Instructions

  • Peel and slice your cucumber length-ways. Once you have done this, remove all the seeds with a spoon and discard them. Now, grate all the cucumber. In a medium sized mixing bowl, combine the yogurt, cucumber, lime juice, coriander (reserving a little for garnish) and salt. Stir to combine the flavours and garnish with the rest of of the fresh coriander.
  • This can be served straight away or covered and stored in a the refrigerator for a few days. A very easy, fresh and delicious dip!
