Cucumber Raita

Cucumber Raita is such a versatile and easy dip.  This can be served with breads, crackers or as a side for chicken & meat dishes.  We served it last night with the Barbecue Tandoori Chicken and the Spiced Zucchini & Eggplant.  Such a fantastic combination of flavours together!

Every so often I look back through my blog and think “What the H…..!”  Well, that was exactly what happened with this recipe today.  Today being August 2017.

This recipe was one of the first recipes on the blog over two years ago.  It really is a refreshing and easy dip.  However, if I stumbled upon it by accident I would not have even given it a second look.  The picture was devastatingly ugly.  Yes ugly.  In fact it was fugly and I am sure you can imagine what that word is derived from.  In any case, I do look through my blog for inspiration for my own dinner table. Today I was making Indian Butter Chicken and wanted a little cooling dip on the side for bread.  That’s when I found this on my blog.  I was honestly horrified.  Now, there are a lot of photos from that year that are just plain bad.  This one had to be top of the list.

So I did make the dip because I really like it.  While I was at it, I refreshed the photos for you guys.  Because maybe, just maybe someone might like it make it now that it looks a little more appealing

A Great Dip For All Occassions

If I had all the time in the world, I might just go back and redo every recipe from when I first started my blog.  I just don’t have that kind of time.  Who does?  But more importantly it is good to look and and see how far the blog has come in these past two years.  I had one photo and one liners.  I thought it was great.  You know what, it was great to me.  Still is really.  But like most things in life, it’s progress not perfection. 

In the meantime, this is a great dip for any Indian, Moroccan of Middle Eastern food.  I don’t make it often but was just reminded that even ugly food can taste good.

Cucumber Raita

Such a versatile and easy dip.  This can be served with breads, crackers or as a side for chicken & meat dishes.  We served it last night with the Barbecue Tandoori Chicken.  Such a fantastic combination of flavours together!

Ingredients

  • 1 Cup Greek yogurt
  • 1 Cucumber
  • Juice of one lime
  • Small bunch of fresh coriander
  • Salt

Instructions

  • Peel and slice your cucumber length-ways. Once you have done this, remove all the seeds with a spoon and discard them. Now, grate all the cucumber. In a medium sized mixing bowl, combine the yogurt, cucumber, lime juice, coriander (reserving a little for garnish) and salt. Stir to combine the flavours and garnish with the rest of of the fresh coriander.
  • This can be served straight away or covered and stored in a the refrigerator for a few days. A very easy, fresh and delicious dip!
