It just wouldn't be summer without an Old FashionedCreamy Potato Salad. This is a new take on an old family favourite. I know everyone has their own favourite potato salad for summer, but sometimes, it's nice to check out something new!
In a large sauce pan, bring water to a boil and add potatoes. Cook for about 20 minutes or until soft. Remove from heat and drain the water. Transfer the potatoes to a large bowl and mash them really well. Set aside.
Make the salad dressing. Combine the mayonnaise, mustard, white wine vinegar, lemon juice, garlic powder, onion powder, salt and black pepper. Whisk well to combine.
In a large bowl combine the mashed potatoes, the salad dressing, chopped peppers, celery, white onion, and spring onions. Stir really well to combine.
Transfer the potato salad to a serving bowl and sprinkle over sweet paprika. Cover with plastic wrap and refrigerate for at least one hour.
Serve cold with your favourite sides.

Notes
Mash potatoes well – To achieve a creamy texture, make sure to mash the potatoes really well to get out all the lumps.
Chop vegetables small – I feel this salad is much better with the vegetables diced really small. Be sure to dice them small for the best potato salad.
Chill time is important – This salad is best chilled for at least one hour. The flavours enhance as well it is better cold. You can even make it up to one day before serving.
