Bacon Cheddar Smashed Potatoes

Ingredients

  • 1 lb baby potatoes
  • 4 ounces cheddar cheese
  • 1/2 cup bacon bits
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • fresh chopped parsley

Instructions

  • Preheat oven to 375 degrees F/190 degrees C. Have ready a large baking tray and set aside.
  • Cook baby potatoes in boiling water for 20 minutes or until they are soft when stabbed with a fork. Remove from heat and drain the water.
  • Arrange the cooked potatoes on a large baking tray. Use the bottom of a glass to flatten out the potatoes. Careful so the potatoes don't fall apart with smashing them with the glass.
  • Brush the smashed potatoes with olive oil and season with salt. Top with cheddar and bacon bits.
  • Bake between 20 - 25 minutes until golden and crisp. Remove from oven and leave a few minutes to set for serving.
  • Garnish with fresh herbs and serve with your favourite dipping sauces.
