Make these delicious Bacon Cheddar Smashed Potatoes for a delicious side dish or appetiser! Crispy smashed potatoes topped with bacon & cheddar. Serve them up with your favourite dipping sauces!
Preheat oven to 375 degrees F/190 degrees C. Have ready a large baking tray and set aside.
Cook baby potatoes in boiling water for 20 minutes or until they are soft when stabbed with a fork. Remove from heat and drain the water.
Arrange the cooked potatoes on a large baking tray. Use the bottom of a glass to flatten out the potatoes. Careful so the potatoes don't fall apart with smashing them with the glass.
Brush the smashed potatoes with olive oil and season with salt. Top with cheddar and bacon bits.
Bake between 20 - 25 minutes until golden and crisp. Remove from oven and leave a few minutes to set for serving.
Garnish with fresh herbs and serve with your favourite dipping sauces.
