Preheat your oven to 350 degrees F/180 degrees C. Have ready a baking tray and a sheet of aluminium foil. Set aside.
In a small saucepan set over medium heat, melt the butter for about 1 - 2 minutes. Add the garlic and bring it to a sizzle. Add the honey and lime juice, stir well and bring to a simmer. Remove from heat.
Place the salmon on the sheet of aluminium foil. Pour over the marinade. Season with salt and pepper and sprinkle over fresh chopped parsley. Add lime slices if desired.
Fold over the aluminium foil and place on the baking tray. Bake between 18 - 20 minutes until fully cooked.
Remove from the oven and serve with the extra marinade in the foil.
