Ingredients

  • 2 tablespoons butter
  • 4 cloves garlic minced
  • 1/4 cup honey
  • juice of two limes
  • 1 lb piece of salmon
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • fresh chopped parsley
  • lime slices optional

Instructions

  • Preheat your oven to 350 degrees F/180 degrees C. Have ready a baking tray and a sheet of aluminium foil. Set aside.
  • In a small saucepan set over medium heat, melt the butter for about 1 - 2 minutes. Add the garlic and bring it to a sizzle. Add the honey and lime juice, stir well and bring to a simmer. Remove from heat.
  • Place the salmon on the sheet of aluminium foil. Pour over the marinade. Season with salt and pepper and sprinkle over fresh chopped parsley. Add lime slices if desired.
  • Fold over the aluminium foil and place on the baking tray. Bake between 18 - 20 minutes until fully cooked.
  • Remove from the oven and serve with the extra marinade in the foil.
