Basmati Rice with Lime and Cilantro

This Basmati Rice with Lime and Cilantro is easy to make, fresh and flavourful. Goes great with Tex Mex and Mexican inspired dishes or Indian dishes.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup basmati rice
  • 2 cups water
  • 2 tablespoons butter
  • juice of one lime
  • zest of one lime
  • 2 tablespoons fresh cilantro finely chopped
  • 1/2 teaspoon salt

Instructions

  • In a medium saucepan set over medium heat, add the olive oil and bring to a sizzle. Add the uncooked rice and stir to completely coat the rice and give it a bit of a fry for about one minute.
  • Reduce heat to low and add all of the water. Cover and leave to cook for about 15 minutes or until all of the water has absorbed and rice is fully cooked.
  • Remove the lid and fluff the rice with a fork. Start from the top and fluff from the top down to the bottom of the saucepan until all the rice is separated and fluffy.
  • Transfer to a serving bowl and add the butter, lime juice, lime zest, cilantro and salt. Stir well to combine and serve.
