Chicken Avocado Lettuce Wraps

Break out these Chicken Avocado Lettuce Wraps for your next weekend appetizer. Fresh salad cups filled with marinaded chicken, fresh avocado and topped with a chipotle mayonnaise. Perfect for end of summer entertaining.

Ingredients

  • 1 lb chicken tenders
  • 2 teaspoons Cajun seasoning
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 2 ripe avocados diced
  • 12 lettuce hearts
  • Juice of one lemon divided

For the dressing

  • 1/3 cup mayonnaise
  • 2 tablespoons sour cream
  • 3 tablespoons chipotle sauce
  • Juice of 1/2 a lime

Instructions

  • Season the chicken with cajun seasoning and salt and coat really well to make sure it's completely seasoned. Heat a large skillet over high heat and add the olive oil. Add the chicken tenders and cook for 3-4 minutes, turn the chicken over and cook for another 3 - 4 minutes or until they are fully cooked. Remove from pan and set aside.
  • Make the dressing by combining the mayonnaise, sour cream, chipotle sauce and lime juice. Stir well to combine.
  • Slice the cooled chicken into small pieces and set aside.
  • Lay out all the lettuce leaves. Fill with the sliced chicken and diced avocado. Drizzle over the dressing and serve.
