Break out these Chicken Avocado Lettuce Wraps for your next weekend appetizer. Fresh salad cups filled with marinaded chicken, fresh avocado and topped with a chipotle mayonnaise. Perfect for end of summer entertaining.
Season the chicken with cajun seasoning and salt and coat really well to make sure it's completely seasoned. Heat a large skillet over high heat and add the olive oil. Add the chicken tenders and cook for 3-4 minutes, turn the chicken over and cook for another 3 - 4 minutes or until they are fully cooked. Remove from pan and set aside.
Make the dressing by combining the mayonnaise, sour cream, chipotle sauce and lime juice. Stir well to combine.
Slice the cooled chicken into small pieces and set aside.
Lay out all the lettuce leaves. Fill with the sliced chicken and diced avocado. Drizzle over the dressing and serve.
