Citrus Winter Salad

Brighten up any day with this Citrus Winter Salad. A chopped salad with tons of fresh clementines, cucumber, feta and mint wrapped up in a fresh Lemon Vinaigrette dressing.

Ingredients

  • 3 cups mixed salad greens
  • 5 clementines peeled, broken into sections and cut into small pieces
  • 2 medium cucumbers peeled, deseeded and diced small
  • 1/2 medium red onion peeled and diced small
  • 1/2 cup Feta cheese crumbled
  • 2 tablespoons fresh mint finely chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon sugar

Instructions

  • Place the mixed salad greens on a large chopping board and roughly chop.
  • In a large salad bowl combine the salad greens, clementines, cucumbers, red onion and feta cheese.
  • Make the vinaigrette by combining the fresh mint, olive oil, lemon juice and sugar. Whisk well to combine.
  • Pour the vinaigrette over the salad before serving and toss to incorporate. Serve as soon as the salad is tossed.
