Make these Cranberry Pecan Muffins for a fall treat soon. A basic vanilla muffin filled with chopped pecans and cranberries for a wonderful nutty and sweet flavour.
Preheat oven to 425ºF/210ºC and line or grease a 12 count large muffin tray. Set aside.
In a medium sized bowl combine the flour, baking powder, baking soda and salt. Whisk to combine and set aside.
In a large mixing bowl, mix the butter, white sugar and brown sugar on high speed for about 3 minutes. Add the Greek yogurt, eggs and vanilla extract. Mix on high speed until well combined, about 2 minutes.
Add the flour to the muffin batter and stir in with a wooden spoon until just mixed in, about one minute. Mix in the milk until combined, about 30 seconds. Fold in the dried cranberries and pecans.
Evenly distribute the muffin batter between the 12 count muffin tin. Sprinkle over with the 1 tablespoon of sugar. Bake between 18 - 22 minutes or until a toothpick inserted into the center comes out clean.
Remove from the oven and place on a wire rack to cool. Remove from the muffin tin when the muffins have cooled off.
