Ingredients

  • 10 oz spiral pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 cup ricotta cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons parsley finely chopped
  • 1 cup pasta water
  • 1/2 cup parmesan cheese finely grated

Instructions

  • In a large saucepan of simmering water, add the pasta and cook according to package. Drain and set aside. Reserve one cup/240 ml pasta water.
  • While the pasta is cooking, heat a large skillet over medium heat. Add the olive oil and garlic. Give a good stir for a minute or so until fragrant.
  • Stir in the ricotta cheese until it's creamy. Add the oregano, salt, pepper and fresh parsley. Stir in until combined. Gradually start pouring in the pasta water, whisking as you pour to ensure you achieve a smooth sauce.
  • Add the cooked pasta and parmesan cheese. Stir well to combine completley.
  • Serve hot and top with additional parmesan cheese if desired.
