Fried Goat Cheese and Caramelized Onion Bruschetta

This Fried Goat Cheese & Caramelized Onion Bruschetta is out of this world delicious. First time I had it was at a restaurant a few years back, I was hooked! Crispy baguette bread topped with sweet caramelized onions, fried goat cheese and a drizzle of balsamic glaze!

Ingredients

  • 1 large onion halved and thinly sliced
  • 3 tablespoons olive oil divided
  • 1/2 baguette cut into 8 slices on the diagonal
  • 6 oz goats cheese log cut into 8 slices
  • 1 egg beaten
  • 1/2 cup bread crumbs fine
  • 1/3 cup vegetable oil
  • drizzle of Balsamic glaze

Instructions

  • Preheat oven to 350ºF/180ºC. Have ready a small baking tray or oven proof dish.
  • First caramelize your onions. In a medium skillet set over a high heat add two tablespoons of the olive oil. Add the onions and cook over high heat for about 3 - 5 minutes or until the onions have browned. Reduce heat to medium, stir well and continue to cook until the onions are completely soft and golden. This will take about 10 more minutes. Turn off the heat and leave the onions in the pan.
  • Prepare your goats cheese rounds. Dip them in the beaten egg and then roll in the bread crumbs. Repeat for all cheese and place them on a plate. Cover and refrigerate for about 15 minutes.
  • While the onions are cooking, place the baguette slices in your baking dish and drizzle over remaining olive oil. Bake for about 10 minutes or until crispy. Remove from oven and set aside.
  • In a medium skillet set over medium to high heat and add the vegetable oil. Bring up to temperature and add the goat cheese rounds. Cook for about 2 minutes until you can see the bottom golden and crisp. Gently, flip all the cheese over and cook for a further 2 minutes until golden and crispy. Remove from heat and drain on paper towels.
  • Top each bread slice with the onions, then place a goats cheese round on the top and drizzle with the Balsamic reduction. Best served immediately.
