Garlic Butter Roasted Potatoes

Make these Garlic Butter Roasted Potatoes for your next delicious side dish! Baby potatoes parboiled and then roasted in garlic butter for a wonderful taste. This recipe only uses 5 ingredients and is great to serve through all seasons.

Ingredients

  • 2 lbs baby potatoes cut into even sizes if necessary
  • 3 tablespoons butter unsalted
  • 3 cloves garlic minced
  • 2 tablespoons finely chopped parsley
  • 1/2 teaspoon salt

Instructions

  • Preheat oven to 375 degrees F/190 degrees C. Have ready a large baking tray and set aside.
  • Place the potatoes in a large pot of boiling water and simmer for about 15 minutes or until they are starting to go soft. Remove from pot and drain. Set aside.
  • In a small saucepan, add the butter and bring it to a sizzle, about one minute. Add the garlic and give a good stir. Cook over medium heat for about 2 minutes. Add the parsley and the salt and stir to combine. Remove from heat.
  • Place the parboiled potatoes on the baking tray. Evenly pour over the garlic butter. Place the potatoes in the oven and roast for about 40 - 45 minutes in total. Turn the potatoes half way through roasting.
  • Remove from oven and serve hot.
