Make these Garlic Butter Roasted Potatoes for your next delicious side dish! Baby potatoes parboiled and then roasted in garlic butter for a wonderful taste. This recipe only uses 5 ingredients and is great to serve through all seasons.
Preheat oven to 375 degrees F/190 degrees C. Have ready a large baking tray and set aside.
Place the potatoes in a large pot of boiling water and simmer for about 15 minutes or until they are starting to go soft. Remove from pot and drain. Set aside.
In a small saucepan, add the butter and bring it to a sizzle, about one minute. Add the garlic and give a good stir. Cook over medium heat for about 2 minutes. Add the parsley and the salt and stir to combine. Remove from heat.
Place the parboiled potatoes on the baking tray. Evenly pour over the garlic butter. Place the potatoes in the oven and roast for about 40 - 45 minutes in total. Turn the potatoes half way through roasting.
Remove from oven and serve hot.
