In a large bowl mix together the lime juice, ginger, cumin, garlic, salt and 1 tablespoon of the olive oil. Stir well and add chicken to the marinade. Cover and refrigerate for at least an hour.
Set your skillet over a medium to high heat and add the remaining olive oil. Bring to up heat and add chicken to the pan, careful not to overlap them on top of each other. Cook for around 7 minutes and then turn over and continue to cook for a further 7 minutes or until cooked through. Remove from heat, drizzle with extra lime juice and toss over fresh coriander.
