Green Pesto Pasta Salad

Ingredients

  • 8 oz bowtie pasta
  • 1/4 cup pine nuts lightly toasted
  • 1 cup green pesto
  • 6 oz mozzarella pearls cut into half
  • 1 cup sun dried tomatoes roughly cut into about 1 inch pieces
  • 1/3 cup parmesan cheese finely grated

Instructions

  • Cook pasta in simmering water until al dente, about 8 minutes. Remove from stove and drain. Rinse with cold water and set aside.
  • In a small sized skillet, add the pine nuts and set them over medium heat. Toss the pan gently until the pine nuts are lightly toasted. This will take about 3 - 4 minutes. Remove from heat.
  • In a large salad bowl combine the cooked pasta, green pesto, mozzarella pearls, sun dried tomatoes, parmesan cheese and the pine nuts (reserving about 1 tablespoon for after). Toss the salad to combine all of the ingredients well. Cover and refrigerate for one hour.
  • Remove salad from the fridge and top with remaining pine nuts before serving.
