Ingredients

  • 1/4 cup olive oil
  • 1/4 cup honey
  • 1/4 cup lemon juice
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic minced
  • 2 tablespoons parsley finely chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lb chicken tenders
  • 2 tablespoons butter

Instructions

  • In a small bowl combine the olive oil, honey, lemon juice, Dijon mustard, garlic, parsley, garlic powder, oregano, salt and black pepper. Stir well to combine.
  • Place the chicken tenders in a bowl and pat dry with paper towels. Pour over half of the marinade and combine well. Cover and place in the fridge for about 15 minutes.
  • Place a small saucepan on stove over medium heat and add the other half of the marinade. Heat the marinade and bring to a simmer for about 2 minutes. Remove from heat.
  • Heat a large skillet over high heat and add the butter until it sizzles. Reduce heat to medium and add the chicken tenders. Cook for about 4 minutes and flip over the chicken tenders. Cook for a further 3 - 4 minutes until fully cooked.
  • Remove chicken from the skillet and transfer to a serving plate. Pour over hot marinade and serve immediately.
