These Honey Oatmeal Cookies are made using melted butter and have use the chilled cookie dough method to make a delicate oatmeal cookie. Make these and stock your freezer for quick treats when the craving hits.
In a medium sized bowl combine the flour, baking soda and salt. Whisk to combine and set aside.
In a large mixing bowl combine the melted butter, honey, eggs and vanilla extract. Mix well until combined, about one minute.
Add the flour mixture and the oats to the wet ingredients and stir in until it's combined, about one minute. Cover and chill the cookie dough for one hour.
Preheat oven to 350 degrees F/180 degrees C. Line two large baking trays with parchment paper and set aside.
Drop the cookie dough by mounds on the cookie sheet about 2 inches apart. Bake between 10 - 12 minutes until they are golden and puffed up a little.
Remove from oven and place on a cooling rack to cool. Repeat for all cookies.
