Ingredients

  • 1 pint cherry tomatoes quartered
  • 1 medium cucumber partially peeled and diced
  • 1/2 medium red onion thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 2 tablespoons finely chopped parsley
  • 1/2 teaspoon salt

Instructions

  • In a large salad bowl, combine the tomatoes, cucumber and red onions.
  • In a small bowl, combine the olive oil, white wine vinegar, parsley and salt. Whisk to combine.
  • Pour the vinaigrette over the salad and toss well to completely combine. Cover and chill for one hour.
  • Remove from fridge and serve.
