Sun Dried Tomato Dip

Ingredients

For the dip

  • 8 oz mascarpone cheese
  • 1/2 cup sour cream
  • 1 cup sun dried tomatoes drained and reserve the oil
  • 3 tablespoons chives divided and finely chopped
  • 1 clove garlic minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the topping

  • 2 sun dried tomatoes finely chopped
  • 1 tablespoon fresh chives finely chopped
  • 2 tablespoons sun dried tomato oil this is the oil that the tomatoes were packed in the jar

Instructions

  • In a food processor combine the mascarpone cheese, sour cream, drained sun dried tomatoes , fresh chives, garlic powder, onion powder, salt and black pepper.
  • Place the lid on the food processor and secure it shut. At first pulse the food processor until the ingredients are combined. Then push puree and mix it well until combined and smooth. This will take between 30 - 60 seconds depending on the power of your food processor.
  • Remove the dip from the food processor and transfer to a serving bowl.
  • Top the dip with the the finely chopped sun dried tomatoes, chopped chives and a drizzle of the oil from the jar.
  • Serve the dip with crisp baguette bread.
