Cook pasta according to package. Drain and set aside. Reserve one cup of the pasta water.
In a large skillet set over medium heat, add the olive oil, garlic and sun dried tomatoes. Cook for about 2 minutes and stir until fragrant, about one minute.
Add the cooking cream and pasta water. Bring to a simmer and stir well.
Add the cooked pasta to the sauce. Reduce heat to low and add the parmesan cheese, dried basil, salt, pepper and fresh chopped parsley. Stir well to combine and remove from heat.
Serve topped with extra with parmesn if desired.
