Heat a medium sized skillet over medium heat on the stove top. Add the olive oil and diced onions. Cook down until soft, about 3 - 5 minutes.
Add the sun dried tomatoes, garlic, oregano, basil and salt to the cooked onions. Stir well and cook until fragrant about 2 minutes.
Add the uncooked rice to the skillet and stir well to ensure the rice is incorporated well. Cook for about 1 - 2 minutes. Reduce heat to low, pour over the broth and stir. Cover and leave to cook for about 15 minutes or until the liquid has absorbed and the rice is fully cooked.
Remove from heat and fluff the rice with a fork. Serve topped with fresh basil if desired.
